ANSWER: you peel them with a potato peeler (to get rid of the dirt, pesticides and general ugliness), and then you run them through a mandolin so they come out shredded.
This makes them easy to masticate (chew), AAA-nd…it makes them easy to be seasoned, mixed with others, and be wrapped by something else, like a piece of lettuce, or a collard green leaf.
WHY? --because it’s fast, and easy… and it’s good for you. DIDN”T YOUR MOTHER EVER TELL YOU TO EAT YOUR VEGETABLES?!
