That symbol is called an "ampersand", and it simply means "and". You wouldn't use it in writing, unless quoting business or product names. Just substitute it for the word itself. You don't need any examples, hopefully.

I never use it. Like killned3 said, you wouldn't use it in any formal writing, but it's more common in notes and IM-speak.

it can be used in a title, if appropriate, but shouldn't be used in text of a ms, unless part of a business name...
