dunno about in a restaurant but at home we had a traymobile, and there's some who'd call it a tea-trolley

Or why not just call it a restaurant cart and leave it to the readers’ intelligence to figure it out? Or Google 'restaurant cart'? There’s a brazillion hits and images.

It is known as a trolley bus, a bus trolley and also as a tray bus and under a brand name as a tray boss(keeping them all in line I guess).

I could maybe go with tray bus, but I'm american - I'm not gonna use the word 'trolly'.
I think I'll just have to describe it a little or leave it out. Any of these words is going to pull the reader out of the story as the wonder what the hell a tray bus is.
'Oh, he means that one thingy!'
As she brought her tray over to the tall wheeled collection cart,...
It stinks. I think I'll leave it out.
