it's called 'sorbet' in an upscale restaurant... which is a fancified/frenchified version of just plain old 'sherbert'...

I always thought sorbet was just a modified sherbet? I've always been told that they're simply called "Pallet Cleansers." Probably no help at all.

It is sorbet. Sometimes they'll also give you a citrus-y wine. The citrus acid burns away whatever is in your mouth, giving your a clear palette. It doesn't really matter these days, though. They are more likely to be serving Wellington than Bayonne ham. Not really something that needs a palette to be enjoyed.

palate is the thing you're all really referring to... [i.e., 'sense of taste']... it's also the official name for the roof of your mouth...
a pallet is something you lay on or that boxes of goods are shipped on...
a palette is the thing you mix your oil colors on, if you're an artist...
and, as i said, the stuff is 'sorbet'...

Red wines like chianti are also served with meals for their ability to scrape off the old taste buds.
By the way, everybody says palate, even though most taste goes on in the tongue.

I can't stand red wines aside from pinot... they're so... rough. Pinot is extremely delicate, you can almost taste the sun in it. Let's not talk about the aromas, eh?

You should start a genre of fiction where hardboiled existential loners cope with a cold, chiaroscuro city in order to drink sunny red wines. Sort of a Pinot Noir
